September 26, 2023, Oaxaca, Mexico: Oaxacan Odyssey: Mezcal, Mole, and More

September 26, 2023

Hello, dear readers! As my journey through Mexico's vast culinary landscape unfolds, I find myself enraptured by the heartbeat of Oaxaca, a city where every stone, scent, and flavor tells a tale.

The very air of Oaxaca pulsates with vibrant life. I ventured through narrow streets, my senses serenaded by the aroma of roasting cocoa beans, intertwined with the rich scent of chilies simmering away in some distant kitchen. Everywhere I went, the harmonious chants of street vendors resonated, each voice a unique thread in the symphony of Oaxacan life.

Ah, mezcal! A treasure of Oaxaca that deserves its own volume of praise. With its deep roots in agave fields, the meticulous crafting of this spirit transcends mere beverage-making. As I sipped on an artisanal glass, I felt connected to generations of tradition, to passionate craftsmen who pour their souls into every bottle.

But it was the moles that truly beckoned my culinary spirit. A feast for the eyes and the palate, the Mole Coloradito Chicken is an emblem of Oaxacan gastronomy. Glistening in its vibrant red hue, the sauce brims with complexity. Each ingredient - from chilies to almonds, raisins, tomatoes, and that divine hint of chocolate - unveils its character in this dish. It's a melody where every note hits the perfect pitch, inviting the eater into the heart of Oaxacan traditions.

Though my journey was initiated by the Tulum Table tour, Oaxaca is an adventure in its own right, bringing forward tales that complement and enhance my experiences. And as every new day dawns, I'm reminded of the vastness and diversity of Mexican cuisine. I invite you to be part of this exploration, as we savor, learn, and celebrate the stories behind every dish.

With every bite, a story unfolds,
