November 14, 2023: Phu Quoc Island, Vietnam - Phu Quoc Paradise: Sunsets, Seafood, & Sandy Shores


Hello, beloved readers! 

Today, I write to you from Phu Quoc Island, my final stop in a month-long exploration of Vietnam’s diverse culinary landscape. Here, on this tranquil island, the days are embraced by the warmth of the sun, and evenings are adorned with spectacular sunsets.

Phu Quoc has been a haven of relaxation and gastronomic indulgence. The island's beaches, lined with swaying palms, have been a serene backdrop to my culinary adventures. Each meal here has been a celebration of the sea, offering the freshest seafood one could imagine. From succulent grilled fish caught just hours before serving, to zesty seafood salads bursting with the flavors of local herbs and spices, each dish has been a delight.

Here, the seafood is as abundant as the island's natural beauty. One evening, as the sky turned a kaleidoscope of oranges and purples, I found myself at a rustic beachfront eatery. The highlight was the Gỏi Cá Trích – a vibrant salad made with herring and an array of fresh herbs and vegetables, all married together with a tangy dressing. Each bite was a burst of the ocean, paired perfectly with the island's relaxed ambiance. 

I reminisce about my journey through Vietnam, from the bustling streets of Hanoi, filled with the aromatic allure of Pho and Bún Chả, to the ancient charm of Hoi An, where the Cao Lầu noodles left an indelible mark on my palate. In Hue, the complexity of Bún Bò Huế mirrored the city's rich history. Ho Chi Minh City’s vibrant energy was reflected in its diverse food scene, offering everything from traditional Com Tam to innovative fusion dishes.

Here in Phu Quoc, as I watch another day gently fade into night, I can't help but feel a sense of gratitude for the incredible experiences Vietnam has offered. This journey has been a tapestry of flavors, cultures, and friendships. It’s not just the places that have made this trip memorable, but the people – from local street vendors to fellow travelers – who have shared their stories and their tables with me.

As I prepare to bid farewell to this enchanting country, I carry with me a suitcase full of recipes, a heart full of memories, and a palate richer in knowledge. Vietnam, you have been a wonderful host. Until we meet again.
