July 28, 2023: Amsterdam, Netherlands - Amsterdam Adventures: Dutch Herring and the Canals
Hello to my fellow epicureans and explorers! Today, I pen down my gastronomic narrative from the city renowned for its artistic legacy and iconic narrow houses with charming gabled facades. These architectural masterpieces stand as the testament of the city's illustrious 'Golden Age' from the 17th-century. In this city, Amsterdam, one can't ignore the alluring symphony of the labyrinthine waterways and tranquil canals. They tickle the senses, almost like the intoxicating aroma of Dutch Herring that seems to steep itself into the very bricks of this captivating city.
My journey through Amsterdam is graced with extraordinary companionship - the culinary maestro of Tulum, Santiago Gomez. The same magnetic personality who recently starred on the cover of "Taste and Tell," where I, too, had the privilege of being interviewed. Our intertwined paths in the vibrant cityscape of Amsterdam could be more than a mere coincidence. Indeed, it may be an appetizing preview of an upcoming collaboration, perhaps a gastronomic opus waiting to reveal itself. For now, this delightful prospect remains concealed like a precious culinary secret. But to those hungry for more, I suggest keeping your taste buds alert and your culinary curiosity well-nurtured.
Together, Santiago and I embarked on a culinary voyage through Amsterdam. Each morsel we savored unfurled a unique tale of the city, each sip echoed with the vibrant spirit of its people. Our first stop was a quaint eatery offering the city's iconic 'Dutch Herring'. A mélange of flavors danced on our palates - the succulent herring cured in a brine that drew out a pleasantly mild saltiness, coupled with the tang of fresh pickles and the bite of chopped onions. Each bite was an homage to the city's rich maritime history.
We further dived into the culinary matrix of Amsterdam with 'Stroopwafel,' a dessert that needs no introduction. Two thin waffles adhered with a syrupy caramel filling, the Stroopwafel is pure Dutch delight. Crisp yet yielding, with a sweet heart that pays tribute to the country's love affair with caramel and confectionary, it was the perfect ending to our meal.
In the midst of this culinary exploration, an unexpected but warmly welcomed call graced my ears. It was Cecile, the enigmatic half-French, half-Filipina whose culinary philosophy had once clashed with mine over the controversial PagPag dish from the slums of Tondo. Now, she was reaching out, extending the olive branch, and expressing a desire to share in our culinary adventure. The prospect brought a delighted smile to my face. A reunion is now on the horizon, promising a fusion of our diverse culinary identities into an exotic banquet of tastes and cultures.
