July 25, 2023: Brussels, Belgium - The Belgium Bite: Waffling Through Brussels
Hello fellow epicureans! 🍽️
What a delightful day it has been in Brussels! I was joined by none other than the culinary maestro himself, Peter Van Hooven. Peter, for those who may not be familiar, is a renowned chef and food critic who has spent decades exploring and interpreting the cuisine of his native Belgium. His passion for food is contagious, and I was delighted to have him as my guide through Brussels' culinary landscape.
We started our gastronomic adventure with a quintessential Belgian breakfast - the Liege waffle. Unlike its Brussels counterpart, the Liege waffle is dense and sweet, with chunks of pearl sugar that caramelize on the outside when baked. The enticing aroma, the satisfying crunch followed by the tender interior... it was a joy to experience.
Then we headed to one of Peter's favorite bistros for lunch. We feasted on Moules Frites, a national dish consisting of mussels and fries. The mussels were steamed in a broth of butter, celery, onions, and white wine, creating a flavor combination that was simply divine. The frites, crispy on the outside, soft on the inside, were the perfect accompaniment to the dish.
Next on our culinary tour was a visit to one of the many chocolatiers that Brussels is famous for. Belgium is renowned for its chocolates, and rightfully so. The pralines and truffles we tasted were silky, rich, and downright exquisite.
Our day was filled with laughter, good conversation, and of course, delicious food.
